Goat Cheese & Honeyed Sweet Potatoes with Roasted Black Grapes

  • 4 small sweet potatoes
  • ½ lb black seedless grapes
  • 1 tbsp olive or coconut oil
  • 1 tsp kosher salt
  • 4 oz goat cheese room temperature
  • 1 tbsp wildflower honey
  • 1 tsp crushed red chili flake


  1. Preheat oven to 375℉ and wash the sweet potatoes and grapes thoroughly.

  2. Combine salt and oil in a large bowl and add the potatoes and grapes, then rub in the oil and salt to coat.

  3. Prick the sweet potatoes a couple of times then wrap them tightly in foil and put in oven to bake for 30 minutes. Then rotate the potatoes with tongs.

  4. At the 30 minute mark, spread the grapes on a small sheet or cookie pan and add to the oven. Cook both another 30 minutes or until the sweet potatoes are tender when poked.

  5. Pull the potatoes and grapes out of the oven and allow to cool for 5 minutes. Then make a slit from end to end on the sweet potatoes and push the points towards each other to fluff the sweet potato insides up.

  6. Dot 1 oz of goat cheese over each sweet potato in ½ tsp amounts.

  7. Then top with ¼ each of the roasted grapes and chili flake and drizzle honey over each as well.
